M·Mondavi-OBERON Cabernet

Appellation: Napa County
93.9% Cabernet Sauvignon, 6.1% other red blending varietals

Grapes are sourced from throughout Napa’s finest wine-growing regions, including Oakville, Oak Knoll, Yountville, Chiles Valley, and Capell Valley. By layering fruit from Napa’s sparse volcanic soils and the deeper alluvial soils of the valley floor, Tony accomplished his goal of marrying many different expressions into one outstanding Cabernet Sauvignon that boasts a beautifully seamless mouthfeel and rich, complex flavors.
After the grapes were gently hand-harvested, de-stemmed and crushed, the Cabernet Sauvignon fermented in stainless steel tanks with an extended post-fermentation maceration. Malolactic fermentation with French oak, combined with 18 months aging (45% new French oak), helped to marry the wine’s flavors and tannins. During blending, Tony looked to other complimentary varieties, like Zinfandel, Merlot, Syrah, and Petite Sirah to enhance the Cabernet’s deep colors, supple silky tannins, and flavors of vibrant black cherry, candied blackberry, with a hint of coffee, dark chocolate and spice – all leading to a lingering and delightful finish.

A classic Cabernet Sauvignon with deep rich color and concentrated black fruit character. Lush dark berry and cassis flavors are complemented by 18 months of French oak barrel aging which provides a supple tannin structure and hints of toasty spice.

Grilled steaks, salmon or even a meaty pizza.
