APPELLATION: Crozes-Hermitage AOP
Careful selection of grapes depending on the origin, the maturity, and the quality of the grapes. All grapes are destemmed. Cold maceration before fermentation Vatting with soft Extraction methods. Partly aged in tank to preserve the fruit’s purity and freshness, and partly in French oak barrels to add complexity and give a structure to the wine.
Colour: Deep purple.
Bouquet: Forest fruits (blackberry, blackcurrant) and violette, lifted by a spicy touch.
Palate: Soft mouthfeel, full of elegance and finesse, with a savoury fruit and a peppery finale.
Grilled meats, beef rib, loin of lamb, duck cutlet.Meat stews: Beef Bourguignon and casserole.
Game: saddle of hare, young wild boar chops, rabbit stew, Highly-seasoned cheeses.
