Grape Varieties: Shiraz (60%) & Cabernet Sauvignon (40%)
WINE-MAKING
Shiraz and Cabernet fruit underwent separate slow, cool fermentation to retain delicate fruit flavours and achieve desired tannin levels. This was followed by pressing and malolactic fermentation, then the best parcels were aged for three months with fragrant oak before the final blend was assembled.
