7 to 10 days at 26º C in stainless steel tanks. Once the vats are full, the grapes undergo a maceration before the alcoholic fermentation takes place. This process takes 30 to 40 days. 100% Malolactic Fermentation.
Aging: 60% in french oak barrels during 11 months
Colour: Clear, very intense, almost black, garnet red to purple
Nose: Red fruit, blackcurrants, green peppers, with notes of spices and hay, typical from this variety
Palate: Fine tannic body, notes of liquorice, fine persistence and long taste
This red wine may be served with red meat such as beef, game, cold meats, salad and a many types of cheese.
