WINE-MAKING
Harvest at full maturity (according to tasting and analytical follow-up of the grapes). Long
classic vatting and malolactic fermentation in tank. Partly aged in French oak barrels.

TASTING NOTES
Colour: Deep garnet-red.
Bouquet: Mineral notes (graphite) develop into ripe, jammy forest fruits, spices and laurel.
Palate: Black fruits melted with spices soften a firm, yet elegant tannic tructure,hallmark of Cornas wines. A remarkably full and complex wine that will benefit of some cellaring !

FOOD MATCH
Meat: White pudding with apple purée. Grilled veal kidney. Quail with grapes Spiced
dishes, f.e. a lamb tagine with dried fruits. Unpasteurized milk cheeses.
